Golden Lion


1 1/2 oz Dolin blanc vermouth
3/4 oz North Shore aquavit
1/2 oz Galliano L’Autentico
2 dashes Berg and Hauck’s celery bitters
lemon peel, for garnish

Stir with ice and serve up with a lemon twist.

The cumin notes in North Shore aquavit are key in this drink. If unavailable, substitute with cumin-infused vodka:

1 cup vodka
2 teaspoons cumin seeds

Steep overnight and strain.


Harvey Weissbanger


1 oz Galliano L’Autentico
2 oz orange juice
6 oz quality wheat beer
orange peel, for garnish

Build in an ice-filled collins glass and give a gentle stir. Garnish with an orange peel. Any good wheat beer can work in this drink, though full-flavored ones work best.

This is a variation on the Harvey Wallbanger and is a staple on the Metrovino brunch menu.

Midnight Shift

Midnight Shift cocktail on my rooftop.

1 1/2 oz Novo Fogo Barrel Aged Cacha├ža
3/4 oz Cynar
3/4 oz sweet vermouth
1/4 oz Galliano L’Autentico
2 dashes mole bitters
1 dash absinthe
orange peel, for garnish

Give all the ingredients a good long stir with ice and strain onto a big frozen cube, if you have one handy. Otherwise serve it on your normal rocks. And don’t omit the orange peel. Like Jeff Lebowski’s rug, the citrus oil really ties everything together.
